January 6: Mom's Tuna Casserole

This recipe is aptly named because it's MY BIRTHDAY! and because I'm a mom, so this is MY tuna casserole. Okay, honestly I thought this meal would be disgusting because of the ingredients... cream of mushroom soup, cream of celery soup, a whole cup of mayonaise, potato chips! How weird.

Anyway, I'll tell you a little about my day. I was surprised to find out when I woke up that my husband had washed all the dishes for me AND made me a chocolate cake with chocolate frosting! We went to Pizza Hut after church (mmm...pizza). Then my hubby took me to the gift shop to buy me some moccasin slippers. After we got home I had to prepare the dinner before I rushed to a baby shower at church.

Here is how I did it. First I gathered up the ingredients, not realizing that I was supposed to have hard cooked eggs:
 
So I cooked the eggs while I did the other preparations:

 
I diced the celery, and put it in the crockpot, I drained and flaked the tuna and put it in the crockpot, I opened the soup cans and put them in, I measured out and put in the mayonaise, I crunched up the potato chips (I used salt and pepper kettle chips - they added great flavor), I added the tarrogon and pepper, then I made some ice water for the eggs. After I cooled, cracked, peeled, and chopped the eggs, I put them in too. Then mixed up the whole disgusting mixture:

 
I set it to cook on low. The recipe said 5-8 hours. Then I hurried off to the baby shower. It was fantastic. Then I came home and checked Facebook. I had lots of birthday wishes. It's so much fun to read those! Then we went back to church for a great Communion service. After we got home I sprinkled the remaining crushed potato chips on the casserole:

 
Then my parents called, so hubby served it up. Didn't he do a great job making it look good?
 
 
Okay, so I know this looks like a disgusting pile of nastiness, but I was REALLY surprised by the flavors, how well they blended, how not-slimy the texture was, and all around how it was good old delicious comfort food! The potato chips on top added a nice crunch; it was all in all a great birthday meal. Oh and here's the cake we had afterwards:

  1. Whenever I hear Tuna Casserole I think yuck. But would not mind trying to make, hence reading the full post. Funny chain of events......i read "Then mixed up the whole disgusting mixture"........then a humongous hearty laugh.....followed by a little pee leaking out. It was all worth it, You Had Me at Disgusting! Great job Sarah!!
